Chicken Fajita Skewers

Not a great Memorial Day weekend here in Greater Boston, weather-wise. Saturday was brutally hot but then Sunday overcast and cold. Nevertheless, I needed to eat and I had all the ingredients for these lovely kebabs, and I was just itching to use the grill on Saturday. Wrapped them in a tortilla to serve, but could also just serve with a side of rice and beans. Also, I had leftovers, which I diced up fairly small added a bit of mayo and guacamole, and it made a lovely chicken salad for dinner last night.

Mexican Hot Chocolate Cinnamon Chip Cookies

I apparently am still enthralled with cinnamon chips. It started in the fall — apparently autumn is a cinnamon season when I could even still find cinnamon chips in the shops — but now that I have a huge stash of them, I am trying out all sorts of things. To wit, these spicy chocolate cookies with cinnamon chips. They smelled amazing whilst baking and taste even more amazing. A bit spicy (with chili powder in the almost-brownie like batter) and lots of cinnamon. Yum.

(Shredded Beef and Spicy Slaw Tacos)

And now for something completely different: Mexican Food. Not something that I am particularly good at making, but I suspect that is more because I don’t *practice* making it enough, because these tortilla with shredded beef and spicy slaw turned out pretty amazing. Experiments on a Sunday afternoon.

Mac & Cheese + Chili = Cheesy Chili Mac

Need to get some comfort food on the table in under 45 minutes? This might be the thing to try. I was really in the mood for Mac & Cheese, but had all the ingredients for Chili in the house, so ended up combining the two recipes. Turns out, it was much faster to make than one would think, and it’s a decadent (in a low-brow kind of way) and rich “sure to fill you up” kind of meal. It’s fairly mild, in terms of spice, but feel free to amp up the chili powder or add a dash of cayenne. Recipes serves 4 people, more if you make a nice salad to accompany it.
