Triple Chocolate Cupcakes

Yesterday was a bit of a stressful day. Not just for me, but it definitely felt like the entire circle of friends around me had an elevated stress day. It wasn’t good. But you know me with particularly hard days, that usually means that I end up baking something. That “something” this time was cupcakes, Triple Chocolate Cupcakes to be exact. It started with Trish musing about chocolate cake and morphed from there. So, in essence, it’s all Trish’s fault. 😛 For now, though, enjoy the cupcakes: dark chocolate cupcakes with white chocolate buttercream frosting and a drizzle of chocolate ganache. While it didn’t make the day less stressful, I was in a better state after making them.

Blueberry Vanilla Birthday Cupcakes
and Key Lime Margarita Cupcakes

I was asked to bring a few desserts to a birthday party, so sticking on the summer theme, I made two very festive kinds: Blueberry Vanilla and Key Lime “Margarita” Cupcakes. Bourbon Chocolate Pecan Pie Cupcakes
with Butter Pecan Frosting

Today, I had to say goodbye to some dear friends. OK, so it isn’t a real goodbye as I am positive that I will see then again and through the powers of this Internet thing, I am quite sure that we will be in touch all the time, but today these two friends stopped being co-tenants. They moved into the building we shared within weeks of me, and it’s been a decade of living here, so ten years of waves and smiles when we were in a hurry, gossip about other neighbors, the parking, the laundry, the snow — god, the snow of 2015! — Italy, Harvard, Germany, our respective families and cats. They have always gotten my foodie experiments, and I remember telling Erin about CSPS a few weeks after I went down this path and she trying my Roasted Salsa Black Bean Soup (March 2011). In exchange, I always received extras from their Crop Share (thank you again, guys!). So a fare-ye-well from me always involves food. So I made these Bourbon Chocolate Pecan Pie Cupcakes with Butter Pecan Frosting for them to take on their drive down to their new home.

“I Love You S’Mores!” Cupcakes:
Chocolate Cupcakes, Toasted Marshmallow Frosting and Graham Cracker Bears

A few final thoughts for Valentine’s Day this year, and this one would be great for kids. Admittedly, these are really time consuming to make, but I made the graham cracker bears a few days in advance and just the cupcakes and frosting this morning. Obviously a play on the whole S’Mores thing (chocolate = the cupcakes, marshmallows = the frosting, graham crackers = the bears). Cute, eh?
