Oven-baked Honey Garlic Chicken Wings

Here are a few numbers for you:
1. Superbowl Sunday is the second biggest annual “food event” in the US, trailing only Thanksgiving.
2. The 5 most consumed foods, according to Forbes, are: pizza, nachos, chicken wings, chili and beer. I guess beer is a food.
3. According to the National Chicken Council’s annual report, during the Super Bowl 2017 weekend, Americans ate 1.33 billion chicken wings. That is a lot of wings.

So all of this said, I’m going to be making some Superbowl treats in the run up to the big game. I am not a big NFL fan (give me ice hockey any day), but it’s a good excuse to make food. So I am starting with these yummy. Oven-baked Honey Garlic Chicken Wings … Easy to make, no greasy messy, very crispy, very flavorful.

Mediterranean Chicken Hand Pies

So, springtime and the first real weekend sunny weekend of the Spring and I decided to go for a picnic. But instead of making a sandwich, I decided to go with these hand pies and a bunch of salads. I really like hand pies, as they are an “enclosed” sandwich of sort. Or a mini-pot pie without a serving dish. Either way, delicious.

Veggie and Chicken Soup with Sacchetti

So it’s soup. Just soup. Really not all that exciting.

But when something so simple turns out so amazing that you even surprise yourself, you know it’s good. It’s still chilly and damp here in Greater Boston these days (at least it’s not presently snowing!), so I decided to make some Veggie and Chicken Soup, and I threw in some Sacchetti pasta (which is tort of like tortellini, but prettier!). Even my dinner guest, who hasn’t had much of an appetite recently had seconds and even wanted to take some home to have for lunch the next day. I’d call that two thumbs up. Simple. Easy. Good. Soup.

Rotisserie Chicken Noodle Soup

I’ve been feeling a little under the weather these days, with mostly what feel like a head cold. Seemed like a good excuse to make Chicken Noodle Soup, but frankly, I didn’t feel much like cooking either so enter the “cheater” recipe for soup, using a rotisserie chicken. The ones from Whole Foods seem mostly healthy, and yes, I did have to go to the store to buy said chicken (nothing like spreading germs!) but this was ready to eat in a just a short bit. It did make me feel a bit better though, so success on that front!
