Peanut Butter and Jelly Blondies

Brownies and blondies: my go-to treat when I feel like baking and am too lazy to make cookies. So I made these blondies this weekend. Spectacularly moist, almost cake-like blondies, oozing with strawberry jam and the addition of peanut butter chips to up the PB quotient! Enjoy!

Ingredients
1 1/2 cups (3 sticks) unsalted butter, softened to room temperature
2 cups light brown sugar
1 cup peanut butter
4 eggs
2 teaspoons vanilla extract
1 tablespoon baking powder
1 teaspoon salt
3 cups all purpose flour
1 cup jelly (I used strawberry)
1 cup peanut butter chips

Directions
Preheat oven to 350F. Make a foil or parchment sling for your 9 x 13 baking pan. Spray liberally with baking spray.

In a work bowl, whisk together the flour, baking powder, and salt together.

In the work bowl of your stand mixer, cream butter, brown sugar, and peanut butter until creamy. Add eggs and vanilla and continue to mix. Slowly add flour mixture to the butter mix and mix until just combined. Stir in peanut butter chips. Spread into your prepared pan. Drop the jelly on top of the batter in the pan and swirl it around with a knife.

Bake for 35 to 40 minutes. Let cool in the pan completely before lifting out and cutting into squares.
