It’s Friday. I have some berries left. I want a drink. This is what I came up with … a mojito with cassis (not my own homemade, though that is in progress) and some red currants thron in. Really summery and refreshing. Might have to make a couple more [grin].
2 parts white rum
1 part Creme de Cassis
1 part mint simple syrup (see directions on this cocktail)
1 lime wedge, plus more to garnish
a small handful red currants, plus more to garnish
1 sprig fresh mint leaves, to garnish
In a glass or cocktail shaker, muddle the lime and red currants. Pour in the mint simple syrup, the rum and the cassis and give a stir. Strain into a glass filled with ice and top with soda water. Garnish with additional lime, currants and mint. Serve immediately.
