1 cup fresh strawberries, washed, hulled and diced
1/3 cup sugar
1 ounce Elderflower Liquor (St. Germaine)
top with Champagne or Sparkling Wine
In your food processor or blender, pulse the strawberries with the sugar until very smooth. In a chilled glass of your choice (I used a martini glass, but a champagne flute would work just as well), spoon 2 ounces (4 tablespoons) strawberry puree and add once ounce St. Germaine. Top with champagne or sparkling wine and serve immediately.
