Huevos Rancheros, Kat-style


Ingredients, per person
2 corn tortillas
vegetable oil
2 eggs
1/2 cup pulled pork per tortilla*
1/4 tablespoons canned pinto beans, drained
1/4 cup shredded cheddar cheese
1/4 cup chopped tomatoes
1/2 avocado, chopped
cilantro / coriander to garnish
salt and pepper to taste
hot sauce (optional)

* this is one of those instances where I cheated and bought pulled pork from Trader Joes. You can, of course, make your own.

Directions
Preheat oven to 350F. On a cookie sheet, lay out your corn tortillas and avoid overlapping them. Bake for 5-6 minutes, until crispy and slightly curled at the edges. Remove tortillas but keep oven on.

Meanwhile, combine the pulled pork and pinto beans and heat according to the manufacturers directions. The Trader Joe’s version says to microwave for 2 minutes of high. Spoon 1/2 cup onto each tortillas, cover with 1/4 cup shredded cheese and return to oven for another 3-4 minutes, until the cheese is melted.

As the cheese is browning, fry your eggs. In a medium skillet over high heat, heat vegetable oil to a ht shimmer, crack 1-2 eggs in the pan and cool until whites are just translucently white. Place an egg on each tortilla. Garnish with tomatoes, avocado and cilantro/coriander. Serve immediately.
